Seafood shines when complemented with the flavor of real maple syrup. Just a tablespoon of real maple syrup brings out the taste of the shrimp, white beans and tomatoes, transforming it from an ordinary pasta into an extraordinary meal.

Preparation time: 15 minutes
Cooking time: 10 minutes

Ingredients:

  • 2 tablespoons olive oil
  • 1/2 onion, chopped
  • 1 garlic clove, crushed
  • 2 teaspoons maple syrup
  • 1 (14-ounce) can chopped tomatoes
  • 1 (28-ounce) can white beans, rinsed & drained
  • 2 cups arugula
  • 3/4 pound medium shrimp, cooked
  • Salt & pepper
  • 1 pound linguine pasta, cooked & oiled

Directions:

  1. Heat olive oil in a large sauté pan and cook onion until soft.
  2. Add garlic and stir to soften.
  3. Stir in maple syrup and tomatoes. Cook gently for about 10 minutes, stirring occasionally.
  4. Add beans and arugula and cook on low heat until arugula wilts. Add a little water if mixture gets too thick.
  5. Stir in shrimp. Season to taste with salt and pepper.


Serve with pasta.
