Maple and Apricot Energy Gel

Energy gels are a convenient source of carbohydrates and provide a quick energy boost when you need it most. This homemade version contains only all natural ingredients, but is similar in carbohydrate content to commercially prepared gels. Experiment with other dried fruit or fresh fruit to find your favorite combination.

1/3 cup dried apricots
1 cup water
2 tablespoons pure maple syrup from Canada
1/4 teaspoon salt

Instructions

In a small saucepan, place the apricots and water. Bring to a boil. Reduce heat and simmer 10-15 minutes until the fruit is very soft. Add the maple syrup and salt. Using a food processor or hand blender, puree the mixture, adding as much water as needed for the desired consistency. NOTE: Mixture will thicken slightly as it cools.  When cool, transfer gel to a portable container you can easily access during your workout, such as a resealable plastic snack-sized bag, or reusable squeeze bottle.
