Ingredients

1 cup Spanish onions finely minced
1 tablespoon oil
2 tablespoons butter
1/2 cup white wine or cider
1/2 cup pure maple syrup from Canada
Salt and freshly ground pepper
4 pork chops of 5 oz. each

  1. In a saucepan, caramelize the onions in oil and butter on low heat.
  2. Deglaze pan with wine or cider and reduce to half.
